A summer red, why not? Be sure to serve it at the right temperature!
Of course, by the sea it’s more inviting to drink a white or sparkling, served really chilled. However a red in the evening, during dinner, particularly if you are having flavoursome pasta dishes, grilled meats, cured meats, fish soup, or hearty regional dishes, what could be a better match?
Sabuci Cerasuolo di Vittoria Classico DOCG, an organic wine from the Cortese estate in Vittoria, in the Ragusan hinterland, is made from the best Nero d’Avola and Frappato grapes. The grapes are all hand-harvested and are fermented separately – the Nero d’Avola in open top barriques, with frequent pumping over and the Frappato in 7hl amphorae. The wines are blended and then aged for six months in a combination of barriques and botte for at least 6 months, after which is rests in the bottle for a further 3 months.
Elegant, complex, savoury, it has hints of cherry, pomegranate, with touches of cocoa, leather and caramel.
Ideal with traditional pasta dishes and meat dishes.
